ClassGraphic Building from what you learned in the Local Meat Production class this spring, you will explore the processing of red meats, focusing on the breaking of whole carcasses of beef and pork into individual cuts. In addition, you will be introduced to the complexities of meat processing equipment. And finally, a Saturday offering will include hands-on training, working with a butcher to break down a whole lamb carcass, and you get to take home the meat!

Please read:  Class will be held at Rockingham County School Board Offices, 100 Mt. Clinton Pike in Harrisonburg. Special Saturday session will be held at T&E Meats, 256 Charles St., Harrisonburg. $20 discount given to Rockingham Young Farmers Association members!
